Vikram Vij is building a food empire. Since launching his first restaurant, Vijâ€™s, in Vancouver in 1994, he and his wife Meeru have gone on to open Rangoli and My Shanti, and launched a line of gourmet-prepackaged curries based on his most popular dishes. Mr. Vij is also familiar to foodies, having served as a judge on the Food Networkâ€™s Top Chef Canada, Chopped Canada and CBCâ€™s Recipes to Riches.
